Laura’s Vanishing Oatmeal Raisin Cookies


  • 1 cup unsalted butter (2 sticks), softened
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1.5 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups Quaker Oats (old fashioned, uncooked)
  • 1 cup raisins (optional)


Heat oven to 350 degrees F. In stand mixer, beat butter until fluffy, add sugars and cream together. Add eggs one at a time; beat well after each addition. Add vanilla. Add combined flour, baking soda, cinnamon, and salt. Mix well. Stir in oats and raisins. Drop dough by rounded tablespoon fools onto ungreased cookie sheet or parchment lined cookie sheet. Bake 8-10 minutes or until light golden brown. Cool 1 minute on cookie sheet then remove to wire rack to cool completely. Store in air tight container. Can be frozen if you want to make in advance of an event.
